(Sauvignon Blanc, Chardonnay)
The grapes for this cuvée come from a section of Clos Roche Blanche plated in 1973. The cépage is roughly 80% Sauvignon Blanc and 20% Chardonnay. The grapes are whole cluster pressed into stainless steel where the juice ferments slowly until the spring. Malolactic conversion took place before the wine was fully dry. It is bottled unfined and unfiltered with minimal additional Sulphur. Textured, nuanced and lovely. Laurent's premier white. Fresh and acid-forward with a super generous mid-palate.
Covering a lot of ground, Touraine’s rich, diverse history and many unique terroirs make it one of the most special for us to explore. Laurent Saillard is located in the tiny town of Pouillé, about an hour east of the big city, Tours. He started his wine life as the chef-manager of one of New York City’s first natural wine bars, Ici. Eventually making the move to producing wine himself, he made the shift to the Loire and worked for other growers like Noella Morantin while making his own wines on the side. In 2015 Laurent, with friend and fellow winegrower Julien Pineau, purchased the infamous Clos Roche Blanche vineyard from revered natural producers Didier Barrouillet and Catherine Roussel. The historic vineyards of Clos Roche Blanche were planted on the limestone hills of Touraine bordering the Cher river by the Roussel family at the end of the 19th century and remained in the family until being transferred over to Laurent and Julien five years ago. And what a plot of land to acquire! Clos Roche Blanche has been organic, at times biodynamic, for around 25 years!
